I bought this book because I had never heard of lectins. And since I’m a stout Ketogenic Diet follower I thought it may be important to know.The books starts out explaining lectins very simply. Everyone knows what gluten is, and how it causes all sorts of problems with your digestion and inflammation. Lectins are also like gluten, but are vital proteins which are found in plants who use them as a way to defend themselves against insects, fungus, etc, through binding carbohydrates. Because of this “agglutination process”it makes them more resistant to digestion, leaving them in our digestive tracts and bloodstreams longer. You can find them in fruits and vegetables, egg, legumes and dairy products, cereal grains, almonds, soybeans and nuts.The Lectin Free Cookbook helps you to understand a little more about this strange little protein, and how it can cause all sorts of problems in your body. Like many people, I don’t stay updated about the latest health news surrounding foods. So I wasn’t sure what lectins were, but after reading this book I had a pretty good understanding of them and how they affect my body. I learned that lectins are a type of protein, which is used as a defense mechanism. Although, lectins sound like they’re helpful, they can actually be harmful to your body and cause a variety of conditions such as diabetes and heart disease. The shocking part is that lectins can be found in most foods, so it’s possible that the next time you eat a meal you could be injecting your body with these harmful proteins. But this book offers tips on how to live a lectin free lifestyle. The book offers tips on foods to avoid, then gives a detailed plan on how to start a diet without lectin foods. Then the book delves into recipes that can be fixed with lectin free foods. Dishes such as ham casserole, creamy chicken soup, clam chowder, and vanilla bean cheesecake are not only healthy, but they’re mouth watering so anybody will enjoy them.

So I got this book because it popped up as a recommendation when I was buying other healthy cookbooks. No clue what lectins were so, what the heck? Well, I’m really not going to go on a lectin free diet. Seems like a lot of work and I am trying a couple of other things. I also don’t have an instant pot, but I’ve tried a couple of the things that looked good and that I thought reasonably safe to try a slow cooker for.The egg custard was pretty good. Probably great with the insta pot. The breakfast casserole was a bit loose but that’s either a) the slow cooker or b) I don’t like runny eggs. Husband liked them so that’s good.I’m sure that there has to be some sort of guide to translating instant pot to slow cooker. Comment if you know of one. I think the diet isn’t for me, but if I can figure it out, the recipes are good. Healthy food is always good no Matter what diet book you pull from.

I had no idea what lectins were and here is a whole diet book discussing them. I had heard about the whole gluten free diet but it was then that I came across this little cookbook that discussed another enzyme, the lectin. From what it told me, the lectin can do almost as influential as the infamous gluten. In the beginning, it lays out a plan for you to follow that promises that will help you stick to the rigorous diet. It then discusses the 14-day plan in detail but honestly I am not sure I am going to through with it. I was just curious about the recipes and they are interesting. I honestly can’t wait to try them out and there are a lot of them. They are broken down into various categories like breakfast, lunch, poultry, and etc. Personally, I am looking forward to the beef baby back ribs. Yum.

I was really excited to get this book. I've struggled with food sensitivities since food poisoning 8 years ago. I'm finally tackling lectins and was excited to find out pressure cooking mitigated a lot of the issues. I made one recipe out of the book yesterday and was pretty disappointing. First off, I'm not crazy about the layout in the book. The content is dense with lots of white space below and in some cases content moving to the 2nd page without filling up the first. And when I say dense, I also mean that what would be multiple steps in another book being combined into a single long step here. I was also finding inconsistencies in the table of contents not matching the page numbers of what it referred to. The one recipe I made had to be put back into the pressure cooker 3 times to finish cooking. I'm not sure if that one particular recipe was just a fluke or if I'll need to cross reference the instant pot cook times going forward versus relying on the book. I'm hoping the book gets better, but I may just start looking for another book.

If I could do zero stars I would! Not lectins free recipes...be warned!!!

Not lectin free! Pages are 60% white space. The recipe for Sweet potato hash / mushrooms on page 25 is missing the cooking time (printed as zero)!!! Why are people allowed to put out a book claiming its lectin free when it’s clearly not. This book was put together haphazardly. Don’t bother.

This cook book is well worth the money!!!
